Low Carb Coconut Chocolate Chip Cookies



Coconut Chocolate Chip Cookies









Makes 36 small cookies.


Ingredients
1/4 cup almond meal/flour
1 cup coconut flour
1 cup unsweetened shredded coconut
1/2 cup finely ground peanuts
1 tsp sea salt
1 cup xylitol
2 extra large eggs
1 1/2 tsp vanilla extract
1/2 cup Smart Balance butter substitute, softened
1 tsp NuNaturals powdered stevia extract
1/4 cup agave nectar
2/3 cup grain sweetened chocolate chips
1/2 tsp baking powder



Preparation

1. Preheat oven for 350 degrees Fahrenheit.

2. Grease a cookie sheet and set it aside.

3. Mix all dry ingredients in one bowl.

4. Mix eggs, Smart Balance, vanilla extract, and agave nectar in another bowl.

5. Add the dry mix and the chocolate chips to the second bowl and whisk thoroughly.

6. Refrigerate for 3 hours.

7. Take the cookie dough out of the refrigerator and roll into small balls.

8. Place the cookie dough balls onto the greased cookie sheet and flatten with the palm of your hand.

9. Slide the cookie sheet into the oven for 10 minutes and take out to cool on a cookie rack.

10. Enjoy!

I am so excited to be posting my first recipe!  I think that it's safe to say I have an actual "cooking" blog now.
